A couple of months ago, health care I began to peruse raw cookbooks in book stores. I’ve always admired those who can stick to a raw diet and I’ve even tinkered with the idea of going raw myself from time to time.
There was one book that particularly stood out to me. Maybe it was the bright colors, implant the crisp photos or the alternative looking girl roughly my age that caught my attention. Whatever the case, sale it convinced me that even my pizza loving ass could go raw. Hence the title of the book, Going Raw.
I got the book home and started my raw journey immediately. With dessert first, of course. Orange-Chocolate Mousse Parfait. Now, I’ll admit, I was skeptical when I saw that one of the main ingredients was avocado. The rich, creamy picture on the next page had me sold though. “What the hell?”, I thought.
Best. Decision. Ever.
After making it a few times, I decided to omit the orange zest and stick with just chocolate and vanilla. I’ve also substituted half maple syrup a few times after realizing I didn’t have enough agave.
Chocolate Mousse Parfait (Adapted from the book Going Raw by Judita Wignall)
2 large avocados
2/3 cup cacao powder
3/4 cup agave nectar
1 1/2 cups raw cashews, soaked for up to 2 hours
1/3 cup coconut oil, warmed to liquid
1/3 cup agave nectar
1 teaspoon vanilla extract
Blend all ingredients in a food processor for a minute or so until it reaches a smooth, pudding-like consistency. Scoop into a bowl, cover and chill.
Blend all ingredients together in a high powered blender (like a Vitamix) and process until smooth. Scoop into a bowl, cover and chill for 2 hours or until it firms up.
Once the vanilla cream has firmed, layer the ‘puddings’ in a small glass with a spoon or a pastry bag, alternating flavors. Tip: a plastic sandwich bag with the tip cut off works too!
This dessert is not only super easy to make, it’s also a fun conversation starter. Just be sure to wait until they take the first bite before you tell them they’re actually eating avocados!
